Green Tea

Ingredients:
12 ounces water
2 tsp Chinese green tea leaves
Heat water to about 175°F .
Put tea leaves into infuser and place in teapot.
When water is ready, sour a scant amount over leaves and then discard (water, not leaves). This rinses the leaves and gives the tea a smoother taste.
Pour remaining amount of water into teapot and brew for 3 minutes.
Pour into tea cups and serve.
Yields: 2 6-oz cups of tea
Notes&Tips:
If you don't have an electric tea kettle that heats water at specific temperatures, use a thermometer. Or just remember to not boil water when making green tea.
This Chinese green tea that I used is a mild green tea. So I like it.
Loose leaf tea can be reused, so I will use these leaves for a second brewing. However, I will only use 6 oz. water and brew for 5 minutes.
