Multigrain Scones with Zante Currants

Ingredients:

  • 1 3/4 cups all purpose flour

  • 1/4 cup almond flour*

  • 1/4 cup oat flour*

  • 1/4 cup wheat germ*

  • 1/4 wheat bran*

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1 tbsp sugar

  • 8 tbsp unsalted butter

  • 2 large eggs, lightly beaten

  • 1/4 cup whole milk

  • 1 tsp almond extract

  • 1 tsp grated orange zest

  • 1/4 cup Zante Currants

  • 2 tbsp slivered almonds

  • Egg wash: 1 egg beaten with 1 tbsp water

  1. In the bowl of an electric mixer with the paddle attachment, combine all purpose flour, almond flour, oat flour, wheat bran, wheat germ, orange zest, baking powder, salt and sugar.

  2. Dice the butter and add to the mixing bowl. Mix on the lowest speed until mixture is pea-size.

  3. Add the beaten eggs to the flour mix and continue to mix on low speed. Slowly add milk and almond extract until just combined. Stir in the currants and almonds. Turn off the machine and place dough on a floured surface.

  4. With floured hands, knead dough a few times. Add a bit more flour if dough is too sticky to handle. Using floured hands, pat dough into an 8 inch round about 3/4 inches thick.

  5. Using a sharp knife or pizza cutter, cut dough into quarters then cut each quarter into 2; for a total of 8.

  6. Place scones on a baking sheet lined with parchment paper. Brush the tops with egg wash.

  7. Bake in a preheated 425°F oven (400°F convection) for 15 to 17 minutes, until scones are golden.

  8. Served with your choice of honey or preserves.

Yields: 8 scones


Notes&Tips:

  • These Multigrain Scones with Zante Currants were absolutely delicious and filling. Even though you feel satisfied after eating one, you will want to eat more just to satisfy your gluttonous taste buds.

  • Here I've used a multitude of flour and grains. You can substitute the wheat germ and wheat brand for whole wheat flour and get good results with the finished product.

  • I like the smaller size of the Zante Currants vs regular raisins. However, if you'd prefer, you can use chopped raisins. Or if you can find true currants in your grocery store that would be terrific.

  • If you do not have an electric mixer, you can use a food processor. In step 1, pulse the ingredients just a few seconds before adding the butter in step 2. Pulse the butter for no more than 10 seconds to ensure that you get a nice crumble in your scones.
