Pecan Molasses Cookies

Ingredients:
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup brown sugar
1/2 cup butter
1/2 cup molasses
1 egg
2 tbsp milk
1 tsp vanilla
1/2 cup pecan pieces
In a stand mixer, cream together butter, sugar, molasses, milk and egg. Stir in vanilla.
In a bowl, combine, flour, baking powder and baking soda.
Gently fold flour mixture into the creamed butter mix. Stir in nuts.
Line two baking sheets with parchment.
Drop teaspoon sizes of dough onto the parchment.
Bake in a preheated 400°F oven for 10 to 12 minutes.
Remove cookies from pan and allow to cook on wire rack.
Yields: 36 cookies
Notes&Tips:
I love the taste of molasses. It takes me back to my childhood days when I would eat molasses by the spoonful. I would not do that now; but the memories evoked by the scent of molasses and a little lick of it are truly treasured.
These cookies combine two of my favorite ingredients: pecans and molasses. They are truly divine. Not too sweet and with a wonderful crunch.
These cookies are easy to make and won't disappoint anyone who happens to eat them.
