Pesto-Crusted Mahi Mahi

Ingredients:
1 lb. Mahi Mahi fillet
1/3 cup basil pesto*
1 tbsp vegetable oil
salt and pepper to taste
Wash Mahi Mahi fillet (cut into portions, if necessary) and pat dry with paper towels. Season with salt and pepper.
In a 12-inch skillet, heat oil over medium-low heat.
Spread pesto over the fillets.
Place fillet portions in the hot oil and cook for 5 minutes. During the last 1 1/2 minutes of cooking, cover skillet. This will allow the tops of the fillets to cook without having to turn the fillets over.
Transfer to a serving platter. Serve with Sautéed Asparagus or any other side of your choice.
Yields: 4 servings
Notes&Tips:
