Sautéed Asparagus

Ingredients:
1 1/2 lbs. asparagus
2 garlic cloves, finely chopped
1 tbsp olive oil
salt and pepper to taste
Wash asparagus and trim off the hard end at the bottom. If your pan is not big enough to cook asparagus whole, cut the asparagus in half.
Heat oil in a skillet on medium heat. Sauté garlic for 30 seconds. Add asparagus and turn to coat with oil. Cook, stirring occasionally, for 5 to 7 minutes, depending on the thickness of the stalks. Season with salt and pepper.
Serve warm with Pesto Crusted Mahi Mahi, or your favorite grilled or roast meat.
Yields: 4 servings

Asparagus is a tasty side dish no matter how it's prepared - broiled, grilled, sautéed, steamed, roasted... I generally grill or roast my asparagus spears but today I decided to just cook the entire meal in one pan. I made Pesto Crusted Mahi Mahi and served it up with a side of this Sautéed Asparagus. Everything done in one pan and I had dinner on the table in no time.
