Sage Pesto

Ingredients:

  • 1 cup fresh sage leaves

  • 2 garlic cloves

  • 1/4 cup chopped walnut

  • 1/2 cup extra virgin olive oil

  • 1 tablespoon grated Parmesan cheese

  • salt and pepper to taste

  1. Place sage leaves in a food process, pulse on and off for one minute.

  2. Add garlic and walnut, process on high for 1 to 2 minutes until mixture is finely chopped.

  3. With the food processor on, drizzle oil until a thick paste forms.

  4. Season with salt and pepper.

  5. Stir in Parmesan cheese. Cover and place in refrigerator until ready to use.

Yields: about 1 1/4 cups


Notes&Tips:

  • I really liked the taste of this Sage Pesto. I made it to use with Grilled Chicken and was blown away by it. I must admit that I do like the taste better than Basil Pesto. However, if you're not a fan of sage, you may not gravitate to it like I did.

  • My Sage Pesto was on the thicker side, but if you'd like a thinner pesto, add a bit more olive oil.

  • Use this Pesto as a spread for toast, with grilled chicken, grilled lamb, or for a turkey sandwich.
