Sage Pesto

Ingredients:
1 cup fresh sage leaves
2 garlic cloves
1/4 cup chopped walnut
1/2 cup extra virgin olive oil
1 tablespoon grated Parmesan cheese
salt and pepper to taste
Place sage leaves in a food process, pulse on and off for one minute.
Add garlic and walnut, process on high for 1 to 2 minutes until mixture is finely chopped.
With the food processor on, drizzle oil until a thick paste forms.
Season with salt and pepper.
Stir in Parmesan cheese. Cover and place in refrigerator until ready to use.
Yields: about 1 1/4 cups
Notes&Tips:
I really liked the taste of this Sage Pesto. I made it to use with Grilled Chicken and was blown away by it. I must admit that I do like the taste better than Basil Pesto. However, if you're not a fan of sage, you may not gravitate to it like I did.
My Sage Pesto was on the thicker side, but if you'd like a thinner pesto, add a bit more olive oil.
Use this Pesto as a spread for toast, with grilled chicken, grilled lamb, or for a turkey sandwich.
