Sour Cherry BBQ Sauce

Ingredients:
1 tablespoon olive oil
1 shallot, peeled and minced
2 garlic cloves, minced
1 pound sour cherries, pitted and halved
1 tbsp apple cider vinegar
1/4 cup water
2 tbsp tomato paste
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp light brown sugar
1 tsp Worcestershire sauce
1/4 to 1/2 tsp ground cayenne
Salt to taste (1/2 to 1 tsp)
In a medium saucepan, over medium heat, add the olive oil.
Add the shallot and garlic and cook for 2 minutes, until translucent.
Add the cherries and mix to combine. Cook until the cherries are very soft, about 10 to 15 minutes.
Add all the seasonings, except the salt, and stir to combine. With an immersion blender (or a regular blender) process until smooth.
If you used a regular blender, transfer the sauce back to the pot and cook over low heat, until thickened, about 15 minutes (depending on desired thickness).
Add salt to taste.

Notes&Tips:
If you don't have Sour Cherry, substitute for regular cherries. However, increase the amount of the apple cider vinegar to 2 or 3 tablespoons.
One pound of cherries yields about 1 3/4 cup sauce.
Use this delicious Sour Cherry BBQ Sauce on all your grilled or roasted meat.
Refrigerate any left over sauce.
