Shrimp Scampi

Ingredients:
1 tbsp butter
2 tbsp extra-virgin olive oil
4 garlic cloves, minced
1/3 cup shrimp, seafood, or vegetable broth
1/2 tsp salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Black pepper to taste
1 1/2 pounds large or extra-large shrimp, shelled but leave tail on
1/4 cup chopped parsley
2 tbsp freshly lemon juice
finely grated zest of 1 lemon
In a large skillet, melt butter with olive oil. Add garlic and sauté for about 1 minute. Add broth, salt, red pepper flakes and of black pepper and bring to a simmer. Let broth reduce by half, about 2 minutes.
Add shrimp and sauté until they just turn pink, 3 to 5 minutes, depending upon their size.
Stir in the parsley, lemon juice and lemon zest.
Serve with your favorite side and garlic bread. Or as an appetizer with garlic bread.
Serves: 4 (as a meal with a side dish)
Notes&Tips:
Shrimp has always been on of my favorite seafood. I ate plenty of shrimp, and fish, growing up. So it's no wonder it continues to be a large part of my family's diet.
This simple Shrimp Scampi as to be expected, is delicious and flavorful. The tang of the lemon juice and the sweetness of the shrimp make for a great combination.
I've left the tail on the shrimp as they make for a beautiful presentation. You can leave on the entire shell of the shrimp for an even more stunning and colorful presentation. I did not do this as I'd have some complaints at the dinner table. Know how picky those kids can be sometimes!
To round off this dish, I served with my Couscous Stuffed Twister Peppers and homemade Garlic Bread. You can even thrown in a Caesar, Garden, Mixed Greens or your favorite salad.
