Sour Cherry Nut Crisp

Ingredients:

For the Filling

  • 1 3/4 lb. sour cherries, pitted

  • 1/2 to 1/3 cup granulated sugar

  • 2 tbsp cornstarch

  • 1/2 tsp ground cinnamon

  • 1/8 tsp salt

For the Topping

  • 1/2 cup raw mix nuts, chopped (pecans/walnuts/almonds/pistachios)

  • 1/2 cup + 2 tbsp all purpose flour

  • 1/3 cup rolled oats

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 6 tbsp unsalted butter, softened

  • 4 tbsp packed light brown sugar

  • 1/4 cup granulated sugar

  1. Preheat oven to 375℉ (Convection 350℉). Grease an 8-inch square baking dish. In a medium-sized bowl, combine the nuts, flour, oats baking powder and salt. Set aside.

  2. In the bowl of an electric mixer, place the softened butter, light brown sugar and 1/4 cup granulated sugar. Using the paddle attachment, mix on medium speed until creamy.

  3. Stir the nut mixture into the butter mixture until just combined. Set aside.

  4. Place the cherries in a large bowl and stir in the sugar, cornstarch, cinnamon and salt. Transfer the cherry mixture to the baking dish and spread evenly. Sprinkle the topping evenly over the cherries.

  5. Place in the preheated oven, and bake until the topping is golden and mixture is bubbling; about 50 to 60 minutes.

  6. Allow to cool completely before serving.

Yields: 8 servings


Notes&Tips:

  • This is a tangy, fruity, crunchy dessert. Serve as is or with some ice cream or whipped cream. It is delicious either way. The topping is out of this world!:)

  • This Sour Cherry Nut Crisp is not an overly sweet dessert as the cherries lend a tangy taste. Nevertheless, it is delicious in its blend of flavors.

  • I baked this Sour Cherry Nut Crisp for 65 minutes as my cherries released quite a bit of juice.
