Sourdough Pancakes

Sourdough Pancakes

For the Sponge:

  • 2 cups (241g) all purpose flour

  • 2 tbsp (28g) sugar

  • 2 cups (454g) milk

  • 1 cup (227g) sourdough starter

For the Batter:

  • all of the sponge

  • 2 large eggs

  • 4 tbsp (55g) vegetable oil or 4 tbsp (60g) melted butter

  • 3/4 tsp (4.5g) salt

  • 1 tsp (4.8g) baking soda

  1. Stir down your starter and remove 227 grams (1 cup). Take this opportunity to feed your starter, if necessary.

  2. In a large mixing bowl, stir together the starter and milk until well combined. Stir in the flour and sugar. Cover and let rest in a warm place for 2 hours or in a cool place overnight.

  3. Heat oven to 200℉. Heat your griddle or pan on the stove top on medium-low heat.

  4. In a small bowl, beat together eggs and oil. Add to the sponge along with the salt and baking soda. Stir to combine.

  5. Grease your griddle or pan with Pam or melted butter. Pour 75g of batter on to your heated grill or pan and cook 2 to 3 minutes per side.

  6. Transfer cooked pancakes to an oven proof platter and place in the heated oven as you continue cooking the rest of the pancakes.

  7. Serve with your favorite maple syrup or honey.

Yields: 10 pancakes


Notes&Tips:

  • I am not exaggerating when I say that these are the best pancakes that I have ever eaten! These Sourdough Pancakes were soft and tender and practically melted in your mouth. Make a double batch of these pancakes as you will want to eat them everyday of the week!
