Spicy Mango Sauce

1 large green mango, peeled and cubed, about 2 cups
2 cups water
2 hot red peppers (wiri wiri)
2 garlic gloves
1 tbsp lemon juice
1 tsp sugar
salt to taste
Place water, mango, garlic and pepper in a small pot. Bring to a boil. Reduce heat to simmer, cover and cook for 20 minutes. Mango should be very soft.
Remove pepper from pot. Carefully remove seeds and return to pot. (Wiri Wiri peppers are very hot, removing the seeds help to reduce some of the heat.)
Using an immersion blender, blend mango until no lumps remain.
Add lemon juice, salt and sugar. Stir to combine.
Serve as a dip with fried green plantains or pholouri.
Yields about 1 3/4 cups.

Notes&Tips:
This sauce requires you use very green mango as it is like a sweet and sour sauce. A semi-ripe or ripe mango changes the taste.
Store sauce in a glass jar in the refrigerator. It will keep fresh for about a week.
Grilled chicken wings goes great with this sauce, also.
When I made this sauce, I thought it was hot, others did not feel the same. So feel free to add as much pepper as fits your palate.
