Walleye with Rosemary-Lemon-Butter Sauce

Ingredients:
1 lb walleye fillets, cut into 4
1 tbsp oil
salt and pepper to taste
For the sauce:
4 tbsp butter
1 tbsp finely chopped rosemary
2 garlic cloves, minced
zest of 1 lemon
1 tbsp lemon juice
Wash and pat walleye fillets dry. Season with salt and pepper.
Heat a large skillet on medium heat. Add oil and cook walleye for 3 minutes per side. Walleye is done when it flakes easily with a fork.
Transfer to a serving platter.
Melt butter in skillet, add rosemary and garlic. Cook 1 to 2 minutes. Remove from heat and stir in lemon zest and juice.
Drizzle some butter sauce over fillet. Serve warm with Purple Potatoes with Rosemary and Garlic.
Remaining sauce can be served on the side or brushed on baguette and served as an accompaniment to the meal.

Notes&Tips:
Fish is easy to cook and does not require too much to make it taste great. I always like to keep it simple when I'm preparing fish. I do not like to overwhelm the fish with too much "outside" taste. This simple butter sauce adds to the flavor of the walleye and locks in its natural taste.

If you cannot find walleye in your area, use any comparable fish like haddock, rockfish or snapper.
