Imitation Crab Salad

Ingredients:
8 oz imitation crab meat
1 stalk celery, finely dice
2 tbsp onion, finely diced
1 tbsp finely chopped parsley
1/4 cup mayonnaise
2 teaspoon freshly squeezed lemon juice
2 teaspoon Dijon mustard
salt and freshly ground pepper
In a medium bowl, flake crab meat and toss with the celery, onion and parsley.
In a small bowl, combine the mayonnaise, lemon juice and mustard.
Add the dressing to the crab meat mixture and stir until just coated.
Season with salt and pepper to taste.
Refrigerate for 30 minutes. Serve with your favorite crackers or toasted baguette.
Yields: about 2 cups
Notes&Tips:
This is an easy but delicious crab salad (imitation). Flaking the meat is the hardest thing you'll do when making this salad. Since I wanted my salad to look a certain way, I flaked by hand. If you don't care for the look I went for, simply pulse crab meat a few times in a food processor.
I didn't go heavy on the mayonnaise, as I don't like the salad taste to depend on only that one ingredient. For a tangier taste, add a teaspoon or two more of the lemon juice.
I served this salad with crackers. Any type of crackers will do, but my favorite is saltine. I feel it helps to let the salad shine a bit more or such a plain tasting cracker.
