Pineapple Mango Refresher

Ingredients:
1 fresh ripe pineapple
1 very ripe mango
3 cups water
1/3 cup sugar
mango or pineapple pieces for garnish, optional
mint leaves for garnish, optional
Wash and peel pineapple. Cut into chunks.
Wash and peel mango. Cut into chunks.
In a blender, add 2 cups pineapple chunks and 1 1/2 cups water. Blend until fruit is pureed and no chunks remain. Pour into a 2 quart pitcher.
Add mango and 1 to 1 1/2 cups water to blender; process until no chunks remain.
Pour into pitcher with pineapple juice.
Add sugar and stir until sugar dissolves.
Chill for at least 2 hours before serving.
Serve chilled with pieces of fruit on rim of glass and a mint leaf or two, if desired.
Serving Size: 8 oz (1 cup)
Notes&Tips:
I am not a juice drinker, but occasionally I might have some. When I do, I like my juice to taste like the fruit it's made from. I also don't like a whole lot of sugar added to the juice.
Summer is a wonderful time to juice your own fruit as there are tons of fresh, sweet fruit for the picking.
Growing up in Guyana, whenever we bought pineapple (or picked our own), we would save the skin to make pineapple juice. Soak the skin in water for a couple of days, sweeten and wallah! you have pineapple juice. I have found however, that the skin from the pineapple purchased in the USA does not make good juice. This could account for the difference in variety or maybe because it's picked so green to be shipped.
If you feel the juice is too thick, you can always add some more water to thin it to your liking.
The sweetness of this Pineapple Mango Refresher depends on how sweet the fruits are. So adjust sugar to taste.
